Healthy Recipe of the Week: Green Quesedillas!

One of my favorite foods of all time are quesadillas. You can eat them for lunch, dinner, and even breakfast if you want to, not to mention you can make them out of almost anything. As long as you have some tortillas, you can use whatever you have in your fridge: cheese, vegetables, meat, and make a delicious meal!

This week I am making a “green” quesadilla that will fill you up and give you unlimited health benefits.

Spinach makes up most of the dish, giving the quesadilla its real nutrition. Spinach is full of magnesium, iron, and calcium, which are vital minerals for your body. Additionally, spinach is one of the best sources of potassium you can find, and it’s is low in calories. The leafy green promotes healthy skin and hair, as well as prevents against cancer, asthma, and even diabetes.

Along with spinach, avocado is a topping I recommend for the quesadillas because of their large source of Omega 3 fats, fiber, and potassium. Avocadoes can aid in lowering cholesterol and preventing cancer and arthritis!

This recipe takes about 15 minutes to make, including cutting the vegetables, and it is super delicious! Although spinach tortillas were called for, you can use any type you like; I used whole-wheat tortillas just to add to the dish’s nutrition.

I also included chicken to add some protein. I simply sautéed the chicken and let it cool before adding it to my quesadilla which I cooked in a pan. I would recommend heating each side of the tortilla for about 2 minutes to get a good crisp and so that your cheese is gooey and melted to perfection! Enjoy!

 

Green Quesadillas:

Ingredients:

-4 Tortillas of your choice (I used Whole Foods’ Whole Wheat Tortillas)

-a few handfuls of cheddar cheese

-a few handfuls of spinach

-1/2 of a jalapeño pepper, sliced

-a few sprigs of cilantro

-1 shallot, sliced

Optional Toppings:

-avocado

-Greek yogurt + lime + chili powder

-your favorite salsa

 

Directions:

  1. Place the cheese, greens, pepper, cilantro, and shallots onto your tortillas.
  2. Fold the tortillas in half and cook for a few minutes on each side, until the cheese has melted.
  3. Enjoy with the toppings of your choice.
