Typically brownies consist of butter, sugar, and milk chocolate, but I have found the ultimate healthy version of brownies that taste like heaven! My brownies have only six ingredients, yes six, and you will probably memorize them and make them all the time; I’ve already done this and I will most likely make this recipe at least 15 more times within the next…15 days.
As opposed to butter, these brownies use coconut oil, which I have been trying to find a use for since I bought a huge container that has been unopened until now. Not only can coconut oil aid with weight loss, it also boosts brain functions, helps to fight off viruses, and is full of healthy fats.
But don’t worry about the coconut taste; you don’t notice it in the brownies. In addition, instead of bleached, processed, and unnatural granulated sugar, the recipe calls for organic brown sugar, which although may not have many health benefits is more natural and less processed.
Unsweetened chocolate is the base for this recipe, and is teeming with health benefits including stress relief, assistance in maintaining a healthy blood pressure, and the ability to lower cholesterol levels in your body.
If I haven’t convinced you that these brownies are the best ever because there are so few ingredients and they are delicious and healthy, listen to this: the recipe is super easy to make! If you have no cooking abilities, do not fret; I promise that you will be able to bake this recipe to perfection without a hitch.
Also, as a warning, if you see a little bit of oil at the top of the mixture when you put the brownies in the pan, the brownies will absorb it while baking so don’t worry. I cooked my brownies for about 30 minutes, but the knife doesn’t have to come out completely clean for them to be ready because they are more fudgy then your average brownie (which is just another reason to love them). Coconut Oil Brownies
Ingredients:
- 3/4 cup of coconut oil (solid when measured)
- 4.5 ounces of unsweetened chocolate
- 1 cup of packed brown sugar
- 3 eggs
- 3/4 cup of all-purpose flour
- 1 teaspoon of salt
Directions:
- Preheat the oven to 350˚. In a small saucepan over low heat, melt the coconut oil and chocolate together.
- Whisk the chocolate mixture into a large bowl with the brown sugar until combined. Add the eggs and whisk for about 30 seconds, until the mixture thickens. Add the salt and flour to the bowl and stir until combined.
- Pour the brownie mixture into an ungreased 9-inch square baking dish and bake for 25-28 minutes.
Yield: 12 brownies
