Chocolate Dipped Peanut Butter Banana Bites
As Spring comes upon us, the weather gets warmer, and people tend to reach for colder snacks. I love to make popsicles, ice cream, and my personal favorite, frozen grapes, right when the temperature starts to rise. This week, I tried to search for a new frozen snack that would satisfy my cravings and I found the perfect treat: chocolate dipped peanut butter banana bites.
This recipe is extremely easy, however there is only one challenge—patience. It takes a little over an hour for the bananas to freeze, and it is hard to wait for these delicious snacks, but the wait is well worth it! Also, this recipe calls for peanut butter, but you can replace it with any type of butter you like: almond, cashew or you could make a combination of your own. In addition, if you don’t have a double broiler to melt the chocolate, use a large pot filled about quarter of the way with water, and add a bowl over top to put the chocolate in—and you can use any type of chocolate you want; I used dark chocolate, but milk chocolate and even white chocolate works too. Enjoy!
Ingredients:
-3 large bananas
-1/3 cup of peanut butter
-1/2 cup of chocolate of your choice
Directions:
- Slice the bananas into slices about ½ inch think.
- Combine two banana slices at a time with peanut butter, sandwiching the slices together.
- On wax paper on a cookie sheet, freeze the banana sandwiches until solid, which will take at least one hour.
- While the bananas are freezing, melt the chocolate in a double broiler.
- Dip each banana sandwich into the melted chocolate and place back on the wax paper. Freeze for another hour.
- Keep banana bites in an airtight container for up to two weeks and enjoy!
