Recipe of the Week: Peanut Butter Chocolate Energy Bites

Calling all peanut butter lovers! These peanut butter chocolate energy bites will satisfy both your sweet tooth and your hunger. Even though these bites look and taste delicious, they are actually filled with nutrients.

This snack contains chia seeds, which are high in omega 3 fatty acids, loaded with antioxidants, and a good source of fiber! Even though this recipe calls for peanut butter, I am still aware of allergies and am here to offer you a nut-free alternative so everyone can enjoy this recipe: sunflower butter.

Almond butter would work for people without allergies who want a healthier option that tastes just as delicious. As you can see, this recipe is easily flexible with room for add-ins and substitutions. I know you’ve been waiting for it, so here you go!

INGREDIENTS:

  1. 1 cup (dry) oatmeal (I like old fashioned)
  2. 2/3 cup toasted unsweetened coconut flakes
  3. 1/2 cup peanut butter
  4. 1/2 cup ground flaxseed
  5. 1/3 cup honey
  6. 1/4 cup unsweetened cocoa powder
  7. 1–2 tablespoon chia seeds (optional)
  8. 1 teaspoon vanilla extract

Instructions:

Add everything to a medium bowl and mix to combine well.  Then place the bowl in the fridge and let it chill for about 30 min.  After the chilling time, take a tablespoon of the mixture in your hand and roll into a ball. Repeat with remaining oat mixture. If your balls aren’t sticking together after the resting period, you can add a little more honey or peanut butter, stir well, and try rolling again. Sometimes it just needs a little more of the wet ingredients to hold together well. Store in an airtight container in the fridge for up to 2 weeks or in the freezer much longer.
